Kare Ayam Bumbu Bali (Balinese Chicken Curry)
A mild and tasty coconut curry chicken dish that can be found everywhere in Bali.
Serves 2 people
Ingredients:
- 100 gr chicken breast
- 1 tbsp lime juice
- 50 gr bumbu bali
- 1 cup of stock
- 2 pieces tomato
- 25 ml coconut milk
- 3 pieces kaffir lime leaves
- 2 pieces fresh bay leaves
- 1 piece lemongrass
- 1/2 litre coconut oil
- salt and pepper to taste
Instructions
- Cut chicken breast into small pieces. Then marinade with lemon juice, salt, and pepper.
- Heat oil into the pan and fry the chicken until white colour.
- Heat bumbu bali in the pan. Once the fragrance becomes stronger, add the cooked chicken, stock, chopped tomato, kaffir lime leaves, bay leaves, lemongrass, salt, and pepper to taste.
- Add coconut milk and keep on a lower temperature for 2 minutes.
